Tokyo-style ramen typically features medium thick, wavy noodles in a shoyu soup flavored with dashi fish stock. Tokyo Ramen are served nationwide and have become popular to the point that they are essentially the stereotypical shoyu ramen. Ramen noodles get soggy quickly and should be eaten immediately after they are served. As with other noodle dishes in Japan, a slurping sound is made when eating ramen. The slurping  enhances the flavors and helps cool down the piping hot noodles as they enter your mouth.

Particular to Nagoya, Kishimen is a variant of udon noodles that are flat and thin, similar to the shape of fettuccine. The ingredients that go into making kishimen are no different from udon noodles, the main difference just being the shape and time taken to cook the noodles. When udon are served with a dipping sauce, take a few strands of noodles and dip them into the sauce before eating them. Kitsune Udon is served in a hot broth with aburaage, thin sheets of fried tofu, placed on top of the udon noodles.
While called soba, Okinawa Soba are not made with buckwheat flour but with wheat flour. Their texture is more of a cross between ramen and  udon noodles. Okinawa Soba are usually served in a hot pork broth with slices of simmered pork, green onions and pickled ginger. Uji is a city south of Kyoto that is famous for tea.

Then it was dominated by the Tokugawa shogunate from 1602 until 1868. In 1871, it became the Shizuoka Prefecture and Shizuoka was given city status in 1889. The name means “calm hills.” Today, Shizuoka-shi is the capital of Shizuoka Prefecture with 700,000 residents. In 2003, it merged with neighboring Shimizu City, becoming one of Japan’s largest municipalities with an area encompassing 545 square miles. Across from the inner moat of Sunpu Castle are the headquarters for Shizuoka Prefectural. On the left are the main offices with a spectacular free observation platform on the 21st floor.
Toppings like shredded nori, green onions, sesame seeds, and grated ginger can be added for enhanced taste and texture. The shopping and attraction focal point of Shimizu Port is S-Pulse Dream Plaza. The complex is named after Shizuoka Prefecture’s professional football team. The mall’s best feature is the Shimizu Sushi Museum.
